AROMA 3: THYME

Aroma number 3 is Thyme essential oil. Powerful, fresh and herbaceous. The quintessentially French herb, so central to French cuisine is also a key component of 'garrigue', the mix of fragrant shrubby plants that grow wild on the dry, limestone hillsides of the Mediterranean coast: thyme, lavender, rosemary, juniper. If garrigue is the smell, cicadas are the sound. The combined scent of garrigue is a particularly wonderful way to describe the herbal aroma you sometimes find in red wines of the south of France.
