Aroma number 2 is Sweet Fennel essential oil. A bittersweet scent with a spicy warmth, coming from the same family as aniseed, and indigenous to the Mediterranean coastline. Florence fennel, or Finocchio, as it's known in Italy, has a bulbous base, which is used as a vegetable in Italian cuisine; crisp and fresh-tasting. Fennel seeds have a potent aniseed-like flavour, while the highly-prized fennel pollen, the flowers, are even more intense.

Its herbal scent can be noted in wines, either referring to the lightly bitter note of the fresh crunchy vegetable part, or the herbal, liquorice taste of the seeds and pollen.
