From prime vineyards on the ocean-facing slopes of the magnificent Helderberg Mountain (pictured). Grapes are picked and sorted by hand, and then a small proportion is aged in French oak barrels. The wine is kept on the lees for 6 months with regular battonage both in tank and barrel. The result is lively fruit, a steely minerality and amazing concentration on the palate. Serve this wine not too chilled to experience its full aromatic potential.
